Three Pepper Skillet Cornbread

Makes 48 servings

Ingredients

  • 5 lb (full box) Krusteaz Professional® Southern Style Cornbread Mix 734-0540
  • 50 fl oz (6 1/4 cups) water
  • 16 oz (3 1/2 cups) finely diced bell peppers (1 red, 1 green, 1 yellow)
  • 3 Tbsp basil pesto sauce

Method

  1. Place Krusteaz Professional Southern Style Cornbread Mix and water in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute. Scrape bowl and paddle.
  3. Add bell peppers and pesto sauce. Change to medium speed and mix 1 minute.
  4. Scale batter into four, prepared 10-inch cast-iron skillets (36 oz batter each pan).
  5. For convection oven, bake at 350°F 25-30 minites; for standard oven, bake at 400°F 30-35 minutes.
