Pre-heat oil to 360-375ºF. Place ice cold water in bowl and add Krusteaz Professional Tempura Batter Mix. Using a wire whisk, mix until batter is smooth. Do not overmix.
Mix raw chicken bites with Sriracha sauce, coating all pieces evenly.
Dip chicken bites in prepared batter and drain 5 seconds.
Fry chicken until golden brown and the internal temperature is 165ºF. Serve immediately.
