Spicy Buffalo Wings

Makes 74, 6 oz servings

Ingredients

  • 76 oz (9 1/2 cups) hot sauce
  • 76 oz (9 1/2 cups) butter, melted
  • 5 lb (17 1/2 cups) Krusteaz Professional® Western Chicken Breader and Batter Mix 733-0660
  • 48 fl oz (6 cups) water
  • 28 lb uncooked chicken wings, each wing separated into 2 sections

Method

  1. Place hot sauce and melted butter in bowl. Using a whisk, stir until blended. Set aside.
  2. Place Krusteaz Professional Western Chicken Breader & Batter Mix and water in separate bowls.
  3. Dip chicken wings in water.
  4. Coat moistened wings thoroughly with Krusteaz Professional Western Chicken Breader & Batter Mix. Shake off excess mix.
  5. Repeat steps 3 and 4.
  6. Place coated chicken on 24 x 16 x 1-inch sheet pans. Allow breaded product to rest, covered, under refrigeration for 1 hour.
  7. Fry in 375°F oil for 6-7 minutes. Immediately brush wings with hot sauce mixture.
