Southern Peach Snack Cake

Makes 64, 3x2-inch servings

Ingredients

  • 5 lb (full box) Krusteaz Professional® Southern Style Cornbread Mix 734-0540
  • 50 fl oz (6 1/4 cups) water
  • 80 oz (9 cups) peach pie filling, divided
  • 1 3/4 oz (1/4 cup) sugar
  • 1/4 oz (1 Tbsp) ground cinnamon

Method

  1. Place water, Krusteaz Professional Southern Style Cornbread Mix and 40 oz (4 1/2 cups) pie filling in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute. Scrape bowl.
  3. Continue to mix on low speed 1 minute. Scale batter into prepared 24 x 16 x 2-inch pan.
  4. Spoon remaining pie filling evenly over batter. Blend sugar and cinnamon and sprinkle over batter.
  5. For convection oven, bake at 350°F 25-30 minutes; for standard oven, bake at 400°F 30-35 minutes.
