Raspberry Oat Bars

Makes 96, 2-inch bars

Ingredients

  • 5 lb (full box) Krusteaz Professional® All Purpose Muffin Mix 734-0120
  • 15 oz (5 cups) instant oatmeal
  • 12 3/4 oz (3 cups) chopped pecans
  • 7 oz (1 cup) light brown sugar
  • 4 oz (1/2 cup) butter, softened
  • 4 fl oz (1/2 cup) water
  • 42 oz (4 cups) raspberry preserves

Method

  1. Place Krusteaz Professional All Purpose Muffin Mix, oatmeal, pecans, brown sugar, butter and water in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute or until dough forms around paddle.
  3. Press 2/3 of dough (80 oz) into prepared full sheet pan. Set aside remaining mixture.
  4. For convection oven, bake at 300°F 14-16 minutes; for standard oven, bake at 350°F 18-20 minutes.
  5. Spread preserves over baked crust. Sprinkle remaining crumb mixture over preserves.
  6. For convection oven, bake at 300°F 20-25 minutes; for standard oven, bake at 350°F 25-30 minutes or until light brown.
