Raspberry Cobbler
Makes 64, 3x2 inch servings
Ingredients
- 5 lb (full box) Krusteaz Professional® All Purpose Muffin Mix 734-0120
- 40 fl oz (5 cups) water
- 10 oz (5) eggs
- 2 1/2 fl oz (1/3 cup) vegetable oil
- 42 oz (4 2/3 cups) raspberry pie filling
Method
- Place water, Krusteaz Professional All Purpose Muffin Mix, eggs and oil in mixer bowl.
- Using a paddle, mix on low speed 30 seconds. Scrape bowl.
- Continue to mix on low speed 30 seconds. Set aside.
- Spread raspberry pie filling into prepared full sheet pan. Spoon batter over raspberry pie filling. Spread over top.
- For convection oven, bake at 300°F 25-30 minutes; for standard oven, bake at 350°F 27-32 minutes. Garnish with fresh fruit and whipped cream, if desired.
