Pumpkin Pancakes with Maple Whipped Cream

Makes 14, 4-inch pancakes

Ingredients

  • 2 cups Sweet Cream Pancake Mix 731-0144
  • 2 Tbl. Brown Sugar
  • 1 tsp. Cinnamon
  • 1 ¼ cups Water, Cold.
  • ½ cup Pumpkin, Cooked and pureed or canned.
  • 8 oz. Heavy Cream
  • 2 Tbl. Maple Syrup, Combined with cream.
  • ½ tsp. Cinnamon, Optional garnish.

Method

  1. Blend pancake mix, brown sugar and cinnamon.
  2. Add water and pumpkin, blending thoroughly.
  3. Pour ¼ cup of batter onto a lightly greased, 375’F griddle. Cook approximately 1 minute per side.
  4. Serve with maple cream and sprinkle with cinnamon.
