Oat Bran Dinner Rolls

Makes 9 3/4 dozen, 1 3/4 oz rolls

Ingredients

  • 68 fl oz (8 1/2 cups) lukewarm water
  • 3 3/4 oz (1/4 cup) active dried yeast
  • 5 lb (full box) Krusteaz Professional® Oat Bran Muffin Mix 734-0250
  • 5 lb (15 cups) bread flour

Method

  1. Place water and yeast in mixer bowl. Add Krusteaz Professional Oat Bran Muffin Mix and bread flour.
  2. Using a dough hook, mix on low speed 2 minutes.
  3. Change to medium speed and mix 6 minutes or until dough forms a ball.
  4. Place dough in lightly greased bowl. Cover and proof in warm, draft-free place 30 minutes.
  5. Place dough on floured surface. Scale into 2 oz pieces and shape as desired. Place on prepared full sheet pans (54 rolls each pan).
  6. Cover and proof in warm, draft-free place 45-60 minutes or until double in size.
  7. For convection oven, bake at 300°F 10-12 minutes; for standard oven, bake at 350°F 12-14 minutes.
