Place buttermilk, Krusteaz Professional Buttermilk Biscuit Mix and cheddar cheese in a mixer bowl.
Using a paddle, mix on low speed for 30 seconds.
Scoop dough using a #24 scoop into greased, ovenable 6 oz ramekin. Top with lobster meat and Monterey Jack cheese. Layer on another scoop of biscuit mix.
For convection oven, bake at 375°F 10-12 minutes; for standard oven, bake at 425°F 14-16 minutes.
Stir parsley into melted butter and brush over biscuits immediately after removing from oven.
