Mexican Spice Brownies

Makes 96, 2 inch brownies

Ingredients

  • 7 1/2 lb (2 pouches) Ghirardelli® Triple Chocolate Brownie Mix
  • 16 oz (2 cups) water
  • 15 oz (2 cups) vegetable oil
  • 12 oz (6) eggs
  • 2 Tbsp cinnamon
  • 1-2 tsp chipotle chile powder (optional)

Method

  1. Place brownie mix, water, oil, cinnamon and chipotle chile powder (optional) in mixer bowl.
  2. Using a paddle, mix on low speed 30 seconds. Scrape bowl and paddle.
  3. Mix on low speed 30 seconds. Do Not Overmix.
  4. Scale batter into prepared (lightly greased or paper-lined) sheet pan(s).
  5. For standard oven, bake at 325°F 40-45 minutes; for convection oven, bake at 275°F 40-45 minutes.
