Hot & Spicy Mexican Cornbread

Makes Makes 64, 3x2-inch servings

Ingredients

  • 5 lb (full box) Krusteaz Professional® Southern Style Cornbread Mix 734-0540
  • 50 fl oz (6 1/4 cups) water
  • 4 oz (2/3 cup) canned, diced green chiles
  • 2 1/2 oz (1/2 cup) diced onion
  • 1/2 oz (1 Tbsp) canned, diced jalapeño peppers
  • 1 Tbsp diced pimiento

Method

  1. Place water and Krusteaz Professional Southern Style Cornbread Mix in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute. Scrape bowl.
  3. Add green chiles, onion, jalapeño peppers and pimiento. Continue to mix on low speed 1 minute.
  4. Scale batter into prepared 24 x 16 x 2-inch pan.
  5. For convection oven, bake at 350°F 15-20 minutes; for standard oven, bake at 400°F 25-30 minutes.
