Crispy Fried Chicken

Makes 76, 5 oz servings

Ingredients

  • 5 lb (full box) Krusteaz Professional® Tempura Batter Mix 733-0140
  • 90 fl oz (11 1/4 cups) ice cold water
  • 1 oz (1/3 cup) ground mustard
  • 24 lb boneless, skinless, uncooked chicken breast strips
  • 8 oz (2 cups) pecans, chopped
  • 75 oz (25 cups) corn flakes, crushed

Method

  1. Place water in mixer bowl; add Krusteaz Professional Tempura Batter Mix and ground mustard. Blend with wire whisk just until blended.
  2. Coat chicken pieces with batter. Lightly drain off excess batter.
  3. Mix together nuts and crushed corn flakes. Coat battered chicken with mixture.
  4. Fry in 350°F oil to the proper internal temperature, about 4 - 4 1/2 minutes.
