Coconut Almond Chews

Makes 9 dozen cookies

Ingredients

  • 5 lb (full box) Krusteaz Professional® White Cake Mix 732-0120
  • 28 oz (10 2/3 cups) flaked coconut
  • 12 oz (1 1/2 cups) butter, softened
  • 16 oz (8) eggs
  • 5 oz (1 cup) whole almonds

Method

  1. Place Krusteaz Professional White Cake Mix, coconut, butter and eggs in mixer bowl.
  2. Using a paddle, mix on low speed 1 1/2 minutes. Scrape bowl. Continue to mix on low speed 1 minute.
  3. Using #40 scoop, drop dough onto prepared baking sheet. Press 1 almond in the center of each cookie.
  4. For convection oven, bake at 300°F 8-10 minutes, for standard oven, bake at 350°F 10-12 minutes.
