Blueberry Cream Waffle

Makes 25, 7-inch waffles

Ingredients

Waffles
  • 5 lb  (full box) Krusteaz Professional® Belgian Waffle Mix 731-0360
  • 80 fl oz (10 cups) cool water
Topping
  • 3 lb (6 cups) Greek style yogurt
  • 1 lb (2 cups) powdered sugar
  • 3 tablespoons lemon juice
  • 3 lb (6 cups) fresh blueberries
  • 1/2 cup lemon zest, fresh

Method

  1. Place Krusteaz Professional Belgian Waffle Mix and water in a mixer bowl.
  2. Mix with wire whip on low speed 30 seconds or until batter is smooth.
  3. Scale 6.5 oz (2, #8 scoops) batter onto preheated, 7-inch round waffle iron. Cook 3 minutes or until steaming stops.
  4. For topping, combine Greek yogurt, powdered sugar and lemon juice.
  5. Place 2 oz of yogurt topping, 2 oz of blueberries and a garnish of zest on the top of each waffle.
