Beer Batter Fish Fillets

Makes 52, 6 oz servings

Ingredients

  • 120 fl oz (15 cups) beer
  • 5 lb (17 1/2 cups) Krusteaz Professional® Western Chicken Breader and Batter Mix 733-0660
  • 3 tablespoons baking soda
  • 20 lb fish fillets, cut into 3 oz pieces

Method

  1. Place beer in mixer bowl; add Krusteaz Professional Western Chicken Breader & Batter Mix and baking soda.
  2. Using a paddle, mix on low speed just until blended. If hand mixing, blend with wire whip just until blended.
  3. Coat fish pieces with batter. Lightly drain off excess batter.
  4. Fry in 350°F oil to the proper internal temperature, about 4 - 4 1/2 minutes.
