Bananas Foster Cupcakes

Makes 6 1/2 dozen cupcakes

Ingredients

Cupcakes
  • 5 lb (full box) Krusteaz Professional® Yellow Cake Mix 744-6110
  • 2 lb (3 1/2 cups) mashed bananas
  • 20 fl oz (2 1/2 cups) water, divided
  • 8 oz (4) eggs
  • 1/2 tsp cinnamon
Icing
  • 5 lb (full box) Krusteaz Professional® Vanilla Creme Icing Mix 732-0800
  • 14 oz (2 cups) light brown sugar
  • 8 oz (1 cup) butter, softened
  • 8 fl oz (1 cup) hot water
  • 4 tsp rum extract

Method

  1. For cupcakes, place 8 fl oz (1 cup) water, Krusteaz Professional Yellow Cake Mix 732-0180 and bananas in mixer bowl. Using a paddle, mix on medium speed 1 minute.
  2. Change to low speed and mix 1 minute while gradually adding balance of water. Scrape bowl and paddle.
  3. Add eggs and cinnamon; continue to mix on low speed 2 minutes.
  4. Using a #20 scoop, scale batter into paper-lined muffin pans.
  5. For convection oven, bake at 300°F 15-20 minutes; for standard oven, bake at 350°F 18-23 minutes. Cool completely.
  6. For icing, place Krusteaz Professional Vanilla Creme Icing Mix, brown sugar, butter, hot water and rum extract in separate mixer bowl.
  7. Using a paddle, mix on low speed 1 minute. Scrape bowl and paddle.
  8. Change to medium speed and mix 5 minutes or until creamy.
  9. Ice cooled cupcakes. Garnish with pecans, if desired.
