Bacon & Green Onion Cornbread Loaves

Makes 3 dozen mini loaves

Ingredients

  • 5 lb (full box) Krusteaz Professional® Corn Muffin Mix 734-0160
  • 40 fl oz (5 cups) water
  • 9 oz (3 cups) chopped green onions
  • 6 oz (1 1/2 cups) bacon, cooked and crumbled
  • 30 oz (3 1/2 cups) whole kernel corn, drained
  • 1/2 tsp cayenne pepper
  • 1/2 tsp chipotle chile pepper

Method

  1. Place water and Krusteaz Professional Corn Muffin Mix in mixer bowl.
  2. Using a paddle, mix on low speed 30 seconds. Scrape bowl and paddle.
  3. Continue to mix on low speed 30 seconds.
  4. Add green onions, bacon, corn, cayenne pepper and chipotle chile pepper. Mix on low speed 30 seconds.
  5. Scale batter into 36 prepared mini loaf pans (4 1/4 oz batter each pan).
  6. For convection oven, bake at 350°F 15-20 minutes; for standard oven, bake at 400°F 20-25 minutes.
