Anadama Muffins

Makes Makes 5 dozen, 2 oz muffins

Ingredients

  • 5 lb (full box) Krusteaz Professional® Southern Style Cornbread Mix 734-0540
  • 24 fl oz (3 cups) buttermilk
  • 16 fl oz (2 cups) water
  • 8 oz (3/4 cup) molasses
  • 8 oz (4) eggs
  • 3 1/2 oz (1/2 cup) packed brown sugar

Method

  1. Place buttermilk, water, Krusteaz Professional Southern Style Cornbread Mix and remaining ingredients in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute. Scrape bowl.
  3. Continue to mix on low speed 1 minute.
  4. Using #20 scoop, fill prepared muffin pans.
  5. For convection oven, bake at 350°F 10-12 minutes; for standard oven, bake at 400°F 16-18 minutes.
